Serendipity Cake




Last weekend my friend Mia and I made a birthday cake for one of our friends.  I named this cake the Serendipity cake because when we first met our friend Robin it was at our favorite nail salon and Robin was convinced it was serendipity!  Little did Robin know that serendipity happens to be my favorite word so when she used it to describe our meeting I instantly knew we would become friends!  We knew that she wanted a white tiered cake with hot pink and lime green decorations.  We also know that she is a fan of hearts and sparkles so being the girly girls that we are, we ran with the idea.

Cake decorating is one of my favorite creative outlets and it's always so much fun to work on cakes with Mia.  Who's Mia?  Well Mia is one of my closest friends and she was my sous chef for three years.  We hit it off instantly with our common love of cake, sparkly jewelry, high heels, penguins, pop music, and Mexican food.  We've seen each other through everything both good and bad, we make boys dizzy which makes us giggle, and for some reason people always think we're up to something ;)  I could really go on about the ridiculous situations we've gotten ourselves into, but for the time being I'm going to keep it cake!  On a professional level we work extremely well together.  We are both perfectionists, extremely organized, and have strong work ethics.  I'll never forget when we first started working together I took a day off and left her a prep list.  That whole week she was having a difficult time with my molten chocolate cakes and it was driving her crazy.  I got a phone call from her in tears that she messed up the brunch muffins.  I told her not to worry about it because it was only muffins, but she was just so upset going on how she couldn't make chocolate cakes, and now she couldn't even make muffins.  At that point I knew she was going to be an awesome sous chef because she really cared about her work, was as conscientious as I am, and was ALMOST as dramatic as me.  Well we've come a long way since the muffin debacle!
What makes us gel even more are our differences.  Mia always like to be super prepared and follow recipes with exact measurements.  I tend to push boundaries and wing it.  When it comes to cakes I always want to do everything over the top which usually makes her very nervous.  Basically if you tell me you want a cake to spin or light up I'll tell you sure, no problem, we got it.  This is the point when Mia starts having an anxiety attack.  Luckily we always pull it off!  At the end of the day I make her push her limits and she reigns me in. We balance each other well :)
So back to the Serendipity cake, it went very smooth.  Robin loves red velvet cake so we made our signature pink velvet cake with vanilla buttercream filling.  We did put a big pink fondant bow covered in disco dust on the cake when we got there, but the lighting was really bad so there is no pic.  Robin loved it and that makes it worth all the work!

  5. Beautiful! I just can't get into fondant. Wish I could then my cakes would look that good....well, maybe not but at least they'd look better. :)

  6. That's adorable - and those happen to be my two favorite colors. I keep trying to convice my 6 year old to let me paint her room that color, but she wants purple!

  9. Your creation looks awesome, and good teamwork and friendship is doubly important in the kitchen. You remind me of a friend I have who just got back from competing on FW Cake challenge, we dont know how he done though as hes not allowed to say until its been on air.
